Enzymes: Back to Some Basics This brief report is written in response to questions I receive regarding enzymes and to make sense of some of the information out there. pH conditions: While only proteins are digested in the stomach, most digestion of proteins, fats and carbohydrates occurs in the small intestine. Normally when the food empties out of the stomach into the small intestine it is acidic. Regardless of the pH of this mixture, the small intestine raises the pH to a level that activates the enzymes secreted by the pancreas. Sodium bicarbonate is secreted to accomplish this and the amount secreted is directly dependent on the pH of the duodenum. Regardless of the amount of acid secreted in the stomach, more or less sodium bicarbonate will be produced to optimize the pH conditions in the small intestine. Therefore, the pH conditions in the small intestine are not dependent on the amount of acid released in the stomach Bacteria: Certain chronic diseases may be related to the quantity of waste products produced by the naturally occurring microflora. Undigested food can act as a nutrient source for the native microflora encouraging its proliferation. If the body’s ability to handle the waste is severely limited the sensitivity to the waste produced increases Digestive enzymes will ensure full digestion of the meal and minimize the amount of partially digested food going to the large bowel for the bacteria. Food allergies: Small quantities of partially digested foods (sp. proteins or carbohydrates) may be absorbed by pinocytosis and stimulate an allergic response to a particular food. Digestive enzymes enhance digestion to minimize this immune response Enzyme Blend: The digestive enzyme formulation should contain different types of enzymes. Proteases, for example, should be blended together so that you can digest proteins from both animal and plant sources. Studies show that all proteins are absorbed only as the free amino acids or at most, peptides that are a maximum of 2-3 amino acids in length. Therefore, all ingested protein must be fully digested into the free amino acid form to be absorbed by the body Enzyme activity units: An enzyme activity unit is usually defined as the amount of enzyme that will transform 10-6 M of substrate per minute at 250 C or is sold by manufacturers only stating the temperature optimal for that enzyme (our enzyme units are normalized to 370 C).
